Today is Saturday. How ’bout Lemonade?

My days have been all mixed up this week because of our holiday.  I did figure out that today is Saturday, and skipped over to the farmer’s market.  We are experiencing one of our “surprise” weather days, this morning.  Heavy clouds, temps in the 80’s and a very light rain.  Perfect.  If only for a few hours.  I am still grateful! Fresh eggs….yep, I should have checked the carton, one is broken. ;( Porter peaches, an heirloom tomato AND cannot wait to try lemon cucumbers! (the small round stripes)I found my GROOVE today!  I usually purchase my lye soaps from Laughing Rabbit. I have five bars in route.  But today, I discovered Blue Turtle and am trying her “near patchouli” version.  (and as it turns out, Blue Turtle knows Laughing Rabbit!)  Ok~ enough.  This is a weird conversation. 🙂

Two fun and as usual for me   easy recipes are what I shall share with you today.  Then I am going to run out to fertilize the yard in the rain.  😉

Strawberry Lemonade

I made this last night and hubby’s words, “This is the best drink I have ever had.”  Of course, it WAS 102 degrees out so he was hot and thirsty.  Still….see what you think:

In a blender mix:

1 can frozen lemonade or limeade

Desired amount of cleaned ripe strawberries. (I added about 8-10)

1 cup water

1 – 1 1/2 cup crushed ice (OR pour drink over ice to serve)

Blend, Pour, DRINK!  This is very refreshing and will cool you down.  Design it to your preference by adding more or less water. This lemonade is tart. If you prefer sweet, you might add sprite or sugar or a bit of honey.  Also tasty with a touch of ginger ale or your favorite “spirits”.I froze what was left for slushies later!

Cake Mix Cookies

I made these for my hubby to share with his employees this week, since they had to work on Independence Day.  I have a sweet tooth and these cookies are super easy and yummy!

1 boxed white cake mix (I used confetti white, but I think you could use ANY flavor)

3 TB cooking oil (about ~ I do not “measure”)

2 eggs

1 can prepared icing (I used plain old “WHITE”, cause I love wedding cake icing!)

Preheat oven to 375 degrees Fahrenheit.  Mix the first three ingredients.  If it seems too dry, you might add a smidge of water.  But not much!  Spoon onto ungreased cookie sheet using an ice cream scoop.  Do not smash down.  Bake for about 6-7 minutes or until top and edges brown a little.  Let cool for 1-2 minutes on cooling rack.  Remove and ice while still warm.  Add sprinkles (if desired) immediately.  Makes about 20 moist cookies.HaPPy Saturday!  For my friends in the heat and drought areas….I wish you clouds and RAIN!  For my friends in the cool areas….. wow….enjoy!  Be nice to people ♥

  3. Ok, this is too weird. I kept thinking Thursday was Monday because Wednesday felt like Sunday with the holiday. I am just now back on track too. And, I just wrote a post about…yes, lemonade, and it looks like we have very similar granite counter tops. Sistah – how are we so on the same page!? 🙂 I am definitely going to try your lemonade recipe -it sounds delicious and probably a heck of a lot easier than mine [tho, if you skip the confusing part, it’s really not that difficult…]

    oh yum, the lemonade/strawberry drink looks awesome…..and weird thing…..those lemon cucumbers….i bought some today at our farmers market!…….i’ve never seen them before! going to try them in a pasta salad 🙂

  7. my daughter would love that lemonade – any excuse to drink something sweet! and my stepmom makes her own soap, by the way. we always have a fresh supply at our house. it’s the best!
