Good Morning! I found this recipe on Pinterest yesterday and thought it would be a super one to share. I haven’t tried it yet, but plan on it! (and when I do, I will use honey for the sweetener, not stevia) What I really like is that it is versatile and you can FREEZE it for quick warm-ups! Let me know if you try it! I will report back, too…….. FAST FORWARD A FEW HOURS……Paula (that’s me) tried these. I substituted honey and used organic non-fat milk. I had a fun time with the fillings! I used chopped dates, coconuts, pecans, chocolate chips, fresh blueberries and cran-raisins. It made almost three dozen. (be sure & spray your cupcake lines with cooking spray like she said!) I couldn’t wait til they were totally cooled to try them. My hubby had just come home from work….I split one of the blueberry ones with him….we each took a bite…my comment, “Wow, this has no sweet to it at all.” His comment, “Maybe you could add a sugar glaze?” HAHAHA. Of course I explained that these were supposed to be healthy and that would defeat the purpose! Below, you’ll find my recipe for SUGAR GLAZE!!!! (cause no way am I throwing these out!!!) Glad the kids are coming in tonight….they are getting MUFFINS!!! 😉
Sugar Glaze! (STILL LAUGHING)
1 tbsp. butter 1 c. powdered sugar 1/2 tsp. vanilla 1 1/2 to 2 tbsp. milk 1/8 tsp. salt. Put butter in 2 cup glass measure cup. Cook on high for 30 seconds or until melted. Add all ingredients. Starting with 1 1/2 tablespoons milk, add more only if needed to get glaze consistency. Drizzle over the HEALTHY NO SUGAR MUFFINS! LAUGH WHILE YOU ARE DOING THIS!!!
Next time, I will add a bit of brown sugar and substitute some orange juice for part of the milk. Link below for the recipe. Our favorites were the ones with dates, coconuts and pecans.

This recipe is completely sugar-free and lower in calories as well!
HAPPY SATURDAY, FRIENDS!!!! Don’t forget to LAUGH a LOT today….
Paula, since you don’t like stevia, try splenda – its natural and cooks well.
I will have to try that, Darla. I have never cooked with anything other than sugar or honey and I need to break out and do that! The blueberry ones (fresh) were the ones we struggled with as they were very tart to begin with. As I said above, the ones with dates are yummy!
My usual response to recipes that “have no sugar, have no fat”: I add “have no taste!” However
I am trying very hard to be more aware of the bad stuff. These sound very healthy and sure look good. I have all the ingredients on hand, and I think I’ll try making some today. Chuck will eat anything and not complain. Our house is getting painted today, so I can’t get out the doors anyway
So I’ll bake and craft.
Yay! Let me know how they go and any modifications you use! It sure made breakfast easy this morning. I will freeze what is left. (It makes a TON!) Don’t forget to spray your liners or you’ll be licking the muffin paper! 😉
Haha…this is why I DON’T BAKE – for real:) Sounds like way too much work to me! I’d rather go without. Although, if I was at Delores’ house and she made them I would certainly eat them! Happy baking to you Betty Crocker types!
I am a better customer than a baker! 😉
me too – I know where to find the best baked goods:)
exactly!
