Ever heard of “Bubble & Squeak” ? One of my Irish friends posted on FB that she was making it along with corned beef today. I found a recipe online – it has cabbage, bacon, onion, ham, potatoes and seasoning. Sounds so yummy!

I’m just getting ready to start cooking the corned beef…cabbage, potatoes, carrots, and I bought a loaf of soda bread yesterday. I’m baking brownies to please the ‘chocoholics’. I’m having family over for dinner. I have the green candles and napkins out but no clover in the yard. Would a tiny cactus substitute? My Dad used to tell me I have about an ‘elbow’s worth of Irish blood’ in me.
