WHEN I cook, I like to cook healthy. I could be a vegetarian, but not my hubby and not my sons when they visit. Here is a simple “fried” chicken recipe that is easy and low-calorie. (But the guys don’t know that low cal part, so ssshhhhhh)
Place desired number of boneless, skinless chicken breasts in skillet sprayed with olive oil cooking spray. I buy chicken that has no antibiotics and is hormone free. Season chicken with sea salt, a little garlic powder, Mrs. Dash (if desired), and the biggy for me is to blacken it with black pepper.
Brown on medium heat and then turn, season and brown the other side.
Reduce heat to medium low, so that the inside is good and cooked. You are going for a crispy brown that will crunch like a breading, yet there’s no breading! There are no calories in the your olive oil spray or in the seasonings. The chicken has about 30 calories per ounce of meat.
I tried a baked potato from the Pinterest a week or so ago. With the butter and olive oil as they directed, my house smelled like a deli at a grocery store and it lingered. (YUCK) My sister-in-law, Mary, said she just used olive oil cooking spray on hers, so the following is a “modification” of a crunchy baked potato.
Preheat oven to 400 degrees (F). Place potato on cutting board and slice thinly, but do not slice completely through the bottom. Place on baking pan.
Spray with olive oil cooking spray AND butter flavor cooking spray. Then sprinkle with desired spices. I used sea salt, LOTS of black pepper and garlic powder. Bake for about 35-40 minutes, until potato slices are fork tender. At this point, calories of the a large potato are approximately 275. If you want to keep it low cal, just be cautious on adding any toppings. I served a light ranch on the side, but my husband just wanted ketchup. You could sprinkle with cheese and add bacon bits if you like.
Crunchy Baked Potato
Now all you need to do is throw a salad together or just slice some veggies and you have a pretty easy and very low cal meal. And it really is yummy! Let me know if you try either one! Happy Wednesday!
